We love pickling onions! They can brighten any dish (flavor + visually speaking) and they’re SUPER easy to make!
Ingredients / Equipment:
1 medium red onion, sliced
1/2 cup red wine vinegar
1/2 cup water
1 TBSP agave
juice of one lime
1 bay leaf
5 whole black peppercorns
1 tsp oregano
1/2 tsp salt
Small pot
Small jar
Instructions:
Place sliced onions in a small jar.
Combine red wine vinegar, water, agave, lime juice, bay leaf, peppercorns, oregano and salt in a small pot on medium heat. As soon as the liquid mixture starts to boil, remove it from heat and pour into your jar. Let cool. Cover with a lid and refrigerate. They’ll last for a week in the fridge, but they go much quicker than that in our house.
